The other day I was making a creamy Lima beans soup, and while getting some carrots and celery out of the fridge, I noticed some cauliflower and broccoli florets I forgot about.

I hate wasting food, so I decided to make something with them quickly. I didn’t have a lot of time, and initially wanted to make broccoli cauliflower rice. So, I got out my favorite kitchen gadget that’s easy to clean, uses only muscles (yep, no electricity!) and does the job in about a minute or so 😉

How To Make Broccoli Cauliflower Patties

Once I had my cauliflower broccoli rice, I microwaved it thinking I’d put it aside to season later. Well, why postpone it when I’m already in the kitchen? I had a craving for patties and decided to make some with what I had on hand.

I waited a few minutes for the “rice ” to cool off a bit, then I added a couple eggs, some Lawry’s seasoned salt and a pinch of black pepper, and I was ready to fry them.

It was a little juicy, so I decided to add a couple tablespoons of ground flax seeds. This gave it a bit of a nutty taste and held my patties together better.

TIP: flax seeds are a great addition to patties: you can actually use it instead of eggs if you’d like your recipe vegan (combine 1 tablespoon of ground flax seed with 3 tablespoons of water for each egg needed).

All I had left to do was fry my patties. I wanted to try a healthier version, so instead of frying it like I usually do (in a lot of oil), I dry fried them. All I did was spray some avocado oil to the bottom of my pan, and then added my fritter composition.

After 5 minutes on the first side on medium fire (I covered my pan, to keep the heat in, so that my patties would cook thoroughly), I turned them over and cooked them 4 more minutes.

The Broccoli Cauliflower Fritters Were a Big Success

They came out delicious! In fact, out of the 10 patties I made, my husband ate 6 as soon as he walked in from work.

Next time, I plan to modify my recipe a bit: I’ll add some sauteed onions (in my opinion, onions make everything better!), and bake them instead of fry them.

Easy to make and healthy, this recipe for broccoli cauliflower fritters will become a family favorite.

Ingredients
  • 1/2 lb fresh broccoli florets
  • 1/2 lb fresh cauliflower
  • 2 eggs
  • 1/2 tsp Lawry's salt
  • 1 pinch black pepper
  • 2 tbsp flax seeds (ground)
  • 1 spray avocado oil
Instructions
  1. Place broccoli and cauliflower pieces into your food processor and turn on until chopped up in small pieces. While rice size it's great, you can also leave the pieces a bit bigger if you'd like some more texture

  2. Microwave 10 minutes

  3. Let cool for about 15 minutes

  4. Add 2 eggs, Lawry's salt & black pepper and mix well.

  5. Grind your flax seeds and add them to the mixture

  6. Spray your cooking pan and turn the heat on

  7. Scoop mixture and drop it in your pan. Flatten/shape your patties with a spoon

  8. Cover and let them cook on medium for about 5 minutes (check about half way through to make sure your fire is not too hot)

  9. Flip them over and let cook for 3 to 4 more minutes

  10. Take patties out and arrange them on a plate

  11. Serve warm or cold (both are great!)
