Summer is a time to enjoy outdoors, spending time with family and relaxing, not slaving away in the kitchen. Of course, like everyone else, I’m always looking for easy delicious meals. So, last week, when I received a box of FreshJax Gourmet Handcrafted Spices I was excited to say the least. It’s been 5 days since getting the spices, and I already used them 3 times in my cooking.

My daughter just came back from her last year in college, so I wanted to spoil her a bit. She’s a vegetarian, and LOVES good food. So, for the first day she was home, I made some zucchini patties, a Romanian style potato salad and some broiled asparagus. YUM! Here’s a picture of our dinner that first night:
I used the Citrus Pepper form FreshJax to season the asparagus, and in just a minute I’ll share my simple recipe. Making the broiled asparagus only took 20 minutes from the fridge to the plate (and some of that time was just waiting for it to cook).
Broiled Asparagus Recipe
Ingredients
- 1 package asparagus (I get mine form Costco and they are nice and big!)
- olive oil
- Himalayan salt to taste
- FreshJax citrus pepper spice (I used about half of a teaspoon)
Asparagus is one of my favorite sides: it’s healthy, tasty, and easy to cook. To make the broiled asparagus, I cut about 1 inch off the end, then cut again about 3 to 4 inches. I saved these “woodier” parts of the asparagus to use in a soup (recipe later in the post). You see? In my kitchen, nothing that has nutritional value gets lost. I then washed the asparagus tops, lined them up in an oven tray, added some olive oil, salt and the FreshJax spice and broiled it for 10 minutes turning the asparagus once after 5 minutes.
Your oven may be different, so start by broiling for 3 or 4 minutes and watch it: it’s really easy to burn the asparagus, and that would be a shame!
Here’s my finished asparagus: it was DELICIOUS!!! Truth be told, if my daughter wasn’t home, I would have had the entire bowl in one sitting with no problem, but as a good mom, I had to share 😉
Cream of Asparagus Soup
As I mentioned above, I never throw away anything that has nutritious value. The harder part of the asparagus has plenty of nutrition and taste, but it’s hard to eat because of the high amount of fiber. I never let that keep me from using it to cook something delicious.
Ingredients
- woody/hard part of asparagus
- 2 medium potatoes
- 1 chopped onion
- 1 stalk of celery
- 2-5 cloves of garlic
- 1 carrot
- 2 tablespoons olive oil
- salt to taste (about 1/2 teaspoon)
- 1/2 teaspoon FreshJax peppered habanero
Vitamix 5300 Blender, RedI started with the asparagus, added some potatoes, celery, a carrot, some garlic, salt, the peppered habanero form FreshJaX and enough water to barely cover the vegetables. I never understood why everyone uses vegetable stock, when you can just make the soup from scratch, without the extra work or expense of making stock.
Anyways…. While this was boiling (about 15 minutes), I chopped up the onion and sauteed it in a bit of olive oil.
After the vegetables were boiled, I put them in my trusty VitaMix and then strained everything through a sieve (do that I can remove the hard asparagus leftovers). I then added the sauteed onions (they give both texture and flavor!), and I was ready to serve it. My husband ate 3 bowls of it, and asked me to make it again!
